I love this cake because it’s healthy and still absolutely delicious. Rich, spicy and not too sweet which honestly makes it a good to go and perfect dessert any day and time. A great tea time treat. An excellent dessert for seasonal periods and fitting for the whole family. It has both fresh ginger and ginger powder in it which gives it a slightly peppery taste and taking a decision to match it with honey makes a taste you’ll never forget, it’s heavenly. It still tastes amazing without honey and it is absolutely worthy to be on your ever favorite list.

Recipe:
- All purpose flour 2 cups
- Baking soda 1 tsp
- Baking powder 1/8 tsp
- Cinnamon 1/2 & 1/4 tsp
- Ground ginger 1 &1/2 tsp
- Ginger cloves 1/4 tsp
- Fresh ginger 1 & 1/2 tsp
- Lemon zest
- Magerine 1/2 cup
- Sugar 1/3 or 1/2 cup (depending on how sweet you desire)
- Eggs 2 medium size
- Industrial Browning 1/2 & 1/4 cup
- Milk 140ml
- Hot water with coffee (15g) 90ml
- Vanilla flavor 1/2 tsp
- Black treacle 1 & 1/2 tbsp
Direction:
- Preheat oven or heat up what you’re using to bake
- Line pan with parchment paper or grease pan in prep (rub butter around the pan dust with flour)
- Cream magerine and sugar until pale and fluffy.
- Add eggs to the magerine mixture and mix properly
- Sift flour, baking soda, baking powder, cinnamon, ground ginger and ground cloves.
- Divide the flour into three parts. Add the first batch to the magerine mixture, gently fold in and add the milk. At this point, it’s important you stop mixing and start folding in. In simple words, you don’t want to mix like you’re creaming the magerine and sugar, you just want to incorporate the flour and liquid into the magerine so do it slowly and patiently until it is well Incorporated and you do not see any lumps of flour. You mix less until combined! Repeat the process alternating the flour with the liquid. Start and end with the flour.
- Lastly, add the industrial browning, lemon zest, vanilla flavor and black treacle.
- Pour the batter inside the cake pan and be sure it is well levelled. Put in the oven/ baking device and depending on how fast and heat intensity, check after 35 minutes (mine would never be ready in such amount of time… Lol😂. At least, 45 minutes.)
Important tips:
- Pleaseeee bake on low heat. Bake on low heat!
- You can use butter instead of magerine
- You can bake this in various ways. As cupcakes, in a loaf pan, squared pan or a circle pan!
- If you don’t want to use honey, you can match it with stem ginger syrup or just have it that way.. the taste is still out of this world!
